This is part three of the conversation with Nichole “Coco” Wolf. In it, we take a serious gut check. Pun intended.

Nichole starts with a fact most people don’t know: the lining of your small intestine is only one cell thick. When you eat gluten, it breaks the bonds between those cells. Food, bacteria, and waste leak into the bloodstream. Your immune system goes into overdrive, getting distracted from its real jobs—cancer surveillance, virus defense, infection response. This is what is known as leaky gut. And that’s where chronic inflammation, autoimmune risk, and unexplained symptoms often start.

She also explains MCAS: mast cell activation syndrome. Mast cells are the body’s smoke detectors. They’re supposed to watch for problems and release histamine and inflammatory cytokines when something is wrong. But when they’re over-activated, they’re constantly sounding the alarm. That’s why one glass of wine can suddenly cause flushing, hives, panic attacks, or diarrhea. Your immune system is already on edge, and the wine was just the tipping point.

A powerful moment in the episode: Nichole compares chronic inflammation to an abusive relationship. It doesn’t happen all at once. It’s insidious. Little by little, you stop noticing how bad you feel. Then once you step away—reduce the inflammatory load, repair the gut, support the system—you realize how bad it had gotten. I talk about own experience and how, at 40, I feel better than I can remember feeling, even since my 20s.
